utensils:

- 1 deep fryer
- 1 mandolin

ingredients:

1/ Peel the potatoes.

2/ Cut the potatoes on the MANDOLIN with the julienne cutting block into short sticks approx. 4 to 5 mm on the side. Remove the trimming. Wash, drain and dry on a tea-towel.

3/ Place them immediately into cold water and gently stir. Allow to soak for approx. 10 minutes, drain and pat dry on a tea-towel

4/ COOKING :
- Place the potatoes into hot fat and poach for 3 to 4 minutes.
- They should be cooked but soft.
- Using a strainer, remove them in a fry basket.
- Just before serving place in very hot fat for a few moments and serve crispy
