- 125 gr of sugar
- 120 gr of flour
- 60 gr of butter
- 2 eggs
- 1 lemon peel (thinly grated)
- 1/2 tea-spoon of yeast

Madeleines 1/ Beat
the whole eggs with the lemon peel and the sugar in a pan on
a warm stove.
2/ When the mix thickens and
becomes frothy, add the butter made soft in cream
(soft and smooth), the flour and the yeast together until you
obtain an even mix.
3/ Smear the tins with butter.
Sprinkle and fill until 3/4 full.
4/ Cook for 10-15 mins in a
relatively hot oven (approx. 200°).
