- 1 deep fryer
- 1 mandolin

ingredients:

1/ Peel the potatoes.

2/ Cut the potatoes on the undulating MANDOLIN plate taking care to turn the potato a quarter of a turn each time.
You will thus obtain patterned and squared chips.

3/ Place them immediately into cold water and gently stir. Allow to soak for approx. 10 minutes, drain and pat dry on a tea-towel.
 
4/ COOKING :
- Place the potato strips into very hot frying oil (180 °).
- Gently shake on a wire strainer.
- As soon as the crisps are sufficiently crispy and golden, remove using a fry basket.
- Sprinkle with salt and shake the basket.
