- 1 rouet

ingredients:
- pancake batter
- butter
- vegetables
// Vegetable pancakes

1/ Cut the vegetables using the ROUET fitted with the julienne slicing block of your choice.

2/ Blanch and refresh as before.

3/ Place the fat of your choice in a blini tin.

4/ Place the vegetables in thin layers and thicken with a normal small pancake cooker.

5/ Put in a hot oven for 2 minutes. Shine using melted clarified butter.

6/ Place on the service plate with a spatula
