Vegetable fantasy

1/ Cut
the vegetables using the ROUET fitted with its thinnest julienne
cutting block. Blanch and refresh as before.
2/ Place the vegetables alternating
the colours in a small individual dish which will go in the
oven. Fill the quiche tin half way up without fully covering
the vegetables.
3/ Cook in a bain-marie, in
the oven and without boiling, like a caramel custard.
Serve
on a thin plate with ground pepper.
