Pont-Neuf Potatoes

1/ Use
large potatoes, preferably Bintjes.
2/ Wash and peel.
3/ Cut using a potato chipper
fitted with the 10 mm blade.
4/ Wash in warm water twice
in order to remove the starch. Dry well on a tea-towel.
5/ Place for the first time
in oil at 160 °C - for 6 minutes, drain then place in oil for
the second time at 180 °C - for 4 minutes.
Drain
and salt. |
